Banana Buttermilk Pancakes with Blueberry Compote

We found a great deal this week on blueberries at our local grocery store.  That led to making these incredible pancakes.  They are so simple to whip up and the blueberry compote can be made while the pancakes are cooking.

For the pancakes you will need the following:

1 cup
1/2 tsp
1/4 tsp
1
1 (mashed)
1 cup
2 Tbsp
all purpose flour
baking soda
salt
large egg
banana
buttermilk
butter (melted)
Sift flour, baking soda & salt together in a medium sized bowl.  Add egg, mashed banana and buttermilk.  Stir only until combined but still lumpy.  Add melted butter and stir.  Do not over mix or pancakes will be dense and chewy.  Let dough rest for 5 minutes while you make the blueberry compote.

Blueberry Compote

1/2 cup
1/2 cup
1 cup
1 tsp
water
white sugar
blueberries
vanilla
Combine water & sugar in a sauce pan over high heat.  Bring to a boil and stir constantly until sugar is completely dissolved and syrup is slightly thickened.  Add blueberries, and stir lightly.  You do not want the berries to fall completely apart.  Remove from heat and add 1 teaspoon of vanilla extract.  If you have been following our blog, we made a bottle of vanilla a month or so ago.  Now that it is ready to use, it added a lovely flavor to the blueberries.  After stirring the vanilla into the compote, let it cool and thicken while the pancakes cook.
Heat griddle and cook pancakes as desired.  I usually use about two large tablespoon fulls for each pancake.  Serve pancakes with a few spoon fulls of the blueberry compote over the top and a bit of whipped cream is nice as well.
