Candy Apple Jelly

 Welcome to day 2 of our Celebration of Fall. This is one of my new favorite jellies.  Dave made fresh apple cider last year that we bottled and froze (so good). I used it to make this awesome jelly. Pressing Apples has become a family tradition for us. Each fall we have all our friends and family bring over apples and we press cider all day long.  It is amazing how good it is!

Ingredients:
4 cups apple cider (your favorite apple juice will do)
1/2 cup red hots
1 box of pectin
4 1/2 cups sugar
1 tablespoon butter

In large pan combine cider and red hots.  Slowly mix in pectin. Bring mixture to a full boil. Stir in sugar and bring back to a boil.  Once boiling add butter and cook for 2 minutes, stirring constantly. Remove from heat and pour into hot jars, leaving a 1/4 inch gap at top. Apply lids and allow to cool.
