Cherry Squares

February is all about Valentine’s Day and all kinds of red desserts.  This particular one was a favorite for a class Andrew and I took together.  We have been going to the free cooking classes at Macey’s. It is a great way for us to get some mother son time and we both enjoy the sampling.  A special thanks to Shauna Flammer for sharing this one with us.

Ingredients:
1 cup butter
1 3/4 cup sugar
4 eggs
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1 can cherry pie filling*

glaze:
1/4 cup lemon juice
1 1/2 tsp butter
1 cup powdered sugar
1/2 lemon zest

Directions:

Cream butter and sugar together. Add eggs one at a time then vanilla.  Mix in the baking powder, salt and flour.  This will make a sticky dough.  Grease a 15 x 10 inch baking pan.  Spread a little over half of the dough in the pan.  It will be sticky and take a few min.  Next spread the cherry pie filling over the dough. Take the remaining dough and drop spoonfuls all over the top of the pie filling.  Bake at 350 for 35-40 min.

While squares are baking make the glaze.  In a small bowl combine all ingredients and microwave for 30 seconds.  Stir until all lumps are gone. Microwave another 30 seconds and then pour over hot squares.

*NOTE : The next time I make this I am going to use 2 cans of pie filling.
