Coconut Oil Lime Chocolates

Coconut oil is one of my favorite things. I would call it a super food.  It is full of all kinds of good stuff that I believe helps maintain a healthy lifestyle.  It was not until the last year or so that I realized all the stuff I learned about eating low fat and/or no fat is what has caused a lot of health issues and I believe what caused my weight to increase and not come down no matter how much I exercised.  Once I added coconut oil and cultured foods to my diet the weight finally started to come off.  According to Dr Oz, “Coconut oil can boost thyroid function helping to increase metabolism, energy and endurance. It increases digestion and helps to absorb fat-soluble vitamins.”

I got this recipe from my Mom.  Not sure where she got it from, but it a great way to add these good fats into our diets.

Ingredients:
1/2 cup  coconut oil
1.6 oz  dark chocolate
3-4 drops Doterra lime essential oil
Shredded coconut if desired

Directions:

Melt coconut oil in large measureing cup. Add chopped chocolate to melted oil.

Mix until all chocolate has melted. May need to put in microwave for a few seconds.  Once oil and chocolate are all melted and combined add lime oil.

Pour into molds.  I use all kinds of molds. These are just some I picked up at the thrift store.  I also like to use my silicone mini muffin pan.  No need to grease pans/molds. The chocolate will come out easily once frozen

Place chocolate molds into freezer. Once they are set you can remove from molds.  They should just pop out.

Coconut oil will melt at 76 degrees so I keep them in the fridge or freezer and grab a piece when I am feeling like a sweet treat.
