Ginger Snap Peach Crumble

There is nothing quite like the smell of Peach Crumble baking in the oven.  Dave and I went to the Fruit Stands in Brigham City for these delicious Peaches.  It is always fun to take the 20 min drive over the mountains for fresh fruits and veggies. This recipe is really easy and a real crowd pleaser.

Filling:

6 Fresh peaches peeled and sliced
1/2 cup sugar
1 Tablespoon lemon juice
1 1/2 Tablespoons cornstarch

Topping:
3/4 cup flour
1 cup brown sugar
20 gingersnap cookies crushed
1/2 cup melted butter

Mix all filling ingredients together. Place in a lightly greased 9 x 13 pan.  Mix all topping ingredients together. Sprinkle topping over peach mixture. Bake at 375 for 40-45 min.  Enjoy with Ice Cream.
