I remember going to the mall as a teen.  Hanging out with friends and heading to the food court if any of us had money.  Mrs Fields cookies was a favorite.  My Dad actually bought me the Mrs Fields cookbook and I have made so many yummy things out of it.  The banana bread page actually has so many smudges on it some of it is hard to make out.  Good thing I have it memorized.  In my opinion a good banana bread has to have walnuts and chocolate chips.  I love to put the walnuts in whole so when you bite into your slice you can tell when you get a walnut.

Mrs Fields Inspired Banana Bread

Ingredients
  • 2¼ cups flour
  • 1½ tsp baking soda
  • ¾ cups butter
  • ½ cup brown sugar
  • ½ cup honey
  • 2 large eggs
  • 5-6 medium super ripe bananas
  • 2 tsp vanilla
  • 1 cup walnuts
  • 1 bag (12 0z) chocolate chips ( I like semi sweet)
Instructions
  1. in a medium bowl combine the dry ingredients with a wire whisk and set aside.
  2. In a large mixing bowl cream the butter, brownsugar and honey. Add eggs, vanilla and bananas mix until well combined. Add the flour mixture, blend on low speed just until combined. fold in the walnuts and chocolate chips.
  3. split batter into 2 bread pans. should be just about ½ full. Bake at 325 degrees for 60-70 min until toothpick comes out clean.
