One Pot Chicken Jalapeno Pasta

Finally had our first snowfall this week.  Winter is not my favorite season, but I do love warm dinners and hot chocolate on a chilly evening.  I am also looking forward to seeing the Elk at Hardware Ranch and sledding.  Now that snow has fallen I am getting in the holiday mood.  Time to put up the decorations and start baking.  This time of year gets busy with school programs, family parties and work gatherings.  I love every second of it.

Sign me up for any meal I can make in just one pan.  I would rather not spend all night doing dishes, so this kind of recipe is awesome.  There is so much flavor in this dish.  I think the main reason is the pasta is cooked with all the other ingredients so those flavors are absorbed by the pasta.  This is a great weeknight dinner.  You can have it on the table in 30 minutes or less.

Saute bacon and remove most of the excess grease (leave a little).

Add the jalapeño, pasta, rotisserie chicken and chicken broth.  Bring to a boil stirring every so often so the pasta cooks evenly, for 10-12 min. Most of the broth will be absorbed by the pasta.

Remove from heat and stir in cream cheese and most of parmesan.  Save some parmesan to sprinkle on top.

Ingredients
  • 3 oz bacon, cooked
  • 1-2 jalapeños, finely chopped
  • 2 cups rotisserie chicken- shredded
  • 2½ cups chicken stock
  • 2 cups rotini pasta
  • 8 oz cream cheese
  • ½ cup parmesan cheese
Instructions
  1. In large pot, saute bacon. Once cooked remove any excess fat. Add diced jalapeños, rotisserie chicken, chicken stock and pasta. Bring to a boil and cook 10-12 min until pasta is to your liking. Most of the broth should be absorbed by the pasta. Remove from heat, add cream cheese and parmesan cheese. Mix until well combined. Serve immediately.
