Pork Egg Rolls

Oh My Heck!  These are the absolute best Egg Rolls you will ever have.  I got this recipe from a little old Vietnamese woman.  She made these for us a few time and I think they are even better than the ones at our local Chinese restaurant.

Ingredients:
Egg Roll wrappers ( 20 count)
1 lb ground pork (not sausage)
4 cups shredded coleslaw mix
1/2 onion, diced
1/2 tsp garlic powder
1 1/2 tsp salt
1/4 tsp pepper
2 Tbls sugar
Vegetable oil

Directions:
Heat up 2 tablespoons of vegetable oil, saute onion. once onion is translucent add the pork, garlic powder, salt, pepper, sugar and cook thoroughly.  Add the coleslaw mix to the pork.  Do not cook for very long, they will finishing cooking when you fry them.

Wrap up the ingredients starting in the corner, fold over the right and left corners, and then finish wrapping. Use egg white to seal the final corner.

Cook in medium hot oil for about one minute on each side.

Sweet and Sour Sauce
This is as close to the restaurant sauce I have been able to come.  It is delicious.

1 cup pineapple juice
1/3 cup water
3 Tbls apple cider vinegar
1 Tbls soy sauce
1/2 cup brown sugar
3 Tbls cornstarch

Combine all ingredients and cook over medium heat stirring constantly until mixture is thick.
