Pumpkin Spice Caramel Corn

Welcome to Day 9 of our Celebration of Fall.  I was looking for a sweet and salty treat the other day and I remembered this puffed corn with a caramel coating.  Who doesn’t love caramel corn?  I know I do.  I also love honey and spices. So, I came up with this combo.


1/4 cup butter
1/2 cup honey
1/2 cup brown sugar
1/2 tsp salt
1 tsp pumpkin pie spice
1 bag puffed corn ( 8oz)

Put corn puffs in large bowl and set aside.  I medium sauce pan combine butter, honey, brown sugar, salt and pumpkin pie spice.  over medium heat stir until butter melts. continue stirring until syrup comes to a boil. Boil for 1 min.  remove from heat. Pour caramel syrup mixture over corn puffs and stir until all pieces are coated with caramel. Pour onto foil lined baking sheet and cook for 4 min at 350 degrees. stir, cook another 4 min. spread out some wax paper on the counter and pour puffed corn in one layer.  allow to cool. break apart and store in dry place. or you can just eat it. Sweet, Salty fall treat.
