The other day Viv went to the local grocery store and saw a fabulous deal on raspberries. She bought the whole case. After telling me about the great deal she got, she wanted to know what I was going to make. Off to Pinterest to find some inspiration. Other than lots of freezer jam recipes, which we were already planning, I was not finding anything that sounded fun. Then I saw a picture of a raspberry danish. It looked amazing, but it was missing something, it needed cream cheese!
Thus my Raspberry Cream Cheese Danish was born. I used my mom’s recipe from her christmas bread for the pastry portion. This recipe is a little more involved, but the end result is amazing. You will end up with four loaves, each about 4″ wide and 12″ long. These freeze well, so don’t worry about having to eat them all at once. Though if you leave them out, your family will devour them before you know it!
