These Peanut Butter Cookies are amazing. I first had these years ago when I worked for Icon Health and Fitness. We would have “treat days” every so often and these cookies were the star of the show that day. I had to have the recipe and have made them many times since. These are unique because of the “secret” ingredient that make them stay soft.
Ingredients:
1 cup Peanut Butter
1 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
1 tsp salt
1 tsp baking soda
4 cups flour
secret ingredient (1/2 cup crushed pineapple undrained)
Directions:
Cream together the peanut butter, shortening, and sugars. Add eggs, vanilla and pineapple mix until fluffy. Add salt, baking soda and flour slowely. Once combined place a ball of dough on ungreased cookie sheet and squash with a fork to make design. Bake at 325 degrees for 8- 10 minutes. Just until they start to brown. *If you over cook they will harden.
