Worlds Best White Chicken Chili


It has been a really cold week, winter is finally here.  With is being so cold I wanted something to warm up my spirits and my tummy.  This is one of the best chilis you can make.  There are so many flavors that sing to my soul.  I like to make my own tortilla strips by taking flour tortillas and cutting them into little strips and frying them and sprinkling Emeril’s essence on them.


3-4 Chicken Breasts cut into bite size pieces
1 med onion chopped
1 can green chilies diced
1 clove garlic crushed
2 cups chicken broth
2 15.5oz can of northern beans drained and rinsed
1 15.5oz can pinto beans drained and rinsed
1 tsp salt
1 tsp pepper
1 tsp Italian seasoning
1 tsp cumin
1/2 tsp crushed red pepper
1 cup sour cream
1/2 cup heavy whipping cream
tortilla strips

In a large stock pot saute the chicken, onion and green chilis.  Once chicken is cooked add the garlic and all other spices. cook for 1 more min.  Add the Chicken broth and all the beans. Simmer uncovered for 30 minutes. Then add sour cream and whipping cream.  Serve  immediately.

* I have also used on of Sam’s rotisserie chickens.  this will also add another layer of flavor and is a bit of a time saver.
